Happy Friday! What are you guys up to this weekend?! We are celebrating my brother-in-law's new job tonight and Parker's bestie's birthday tomorrow, followed by a relaxing day of football and pulled pork sandwiches on Sunday. Aaron has been traveling a lot lately and while I would never describe it as easy, it feels like I'm finally finding my rhythm with doing the two kids solo thing. The hours from 5-8pm are a well choreographed dance of bathing, feeding, and dodging meltdowns, but most nights, come eight o clock, it's quiet in this house. Part of that well choreographed dance is finding something to make for dinner that Parker and I will both enjoy, doesn't involve a ton of time, and doesn't leave me with a bunch of dishes to clean up after bedtime. Last night it was sautéed cherry tomatoes and garlic with fresh pasta. The night before was a butternut squash and sausage quiche. What are your favorite easy, weeknight meals?
