Weeknight Meal Plan || #5 (The Vacation Detox)

Happy Weekend, friends!  We are back in Austin this afternoon after a whirlwind trip to Stockholm this past week.  Ever feel like you need a vacation from your vacation?  That’s exactly how I’m feeling at this moment with laundry going in the wash, chicken breast in the slow-cooker, and fighting to keep my eyes open at 2 in the afternoon!  Luckily, I brainstormed our menu on the plane and scheduled an insta-cart for grocery delivery during our layover at JFK, which means we are spending this weekend relaxing, catching up on toddler snuggles, and recovering european pastry withdrawals.  As I bit into my final flaky croissant at our last Swedish breakfast on Friday morning, dreams of clean eating were already dancing in my head!  If you’d like to join our little week long dinner detox, keep reading for the recipes below.  All of them are gluten-free, most are paleo, and I’m already hungry for dinner… at 2pm!
