Weeknight Meal Plan || #4

As we move slowly into these warmer months of the year, I'm getting increasingly excited for all of the new foods that are about to be in season!  There's just nothing quite like a juicy strawberry picked in May!  We've found a new farmer's market in Austin to replace our old one in Studio City (Although, that market will always have a special place in my heart!), and I've found myself living for that hour on Sunday morning checking out the fresh produce followed by a Whole Foods run.  Our dining room is currently still sitting empty, although we did finally make a decision on a table and chairs that I couldn't be more excited about-- stay tuned!  I've been loving trying out new recipes each week and gathering around our bar to see everyone's reaction. (Mostly Parker's, Aaron is super easy to please).  Any favorite recipes you've been making lately? Leave them in the comments and see below for what's on our menu this week..

Monday: We don't actually eat a lot of pasta in our house, but this preserved lemon pappardelle with fried pine nuts, feta, and lemon from My Name is Yeh looks so good. Might prep it a bit on Sunday and toss in some arugula for good measure!

Tuesday: Naturally, it's Taco Tuesday around here again this week with these sheet pan chicken and poblano fajitas from Half Baked Harvest!

Wednesday: I could definitely do breakfast for dinner at least once a week. It's my favorite meal and this avocado and poached egg toast from Lauren Caris Cooks is fast becoming a favorite for Parker and me!  (Again, maybe a little arugula salad with lemon and parmesan on the side?)

Thursday: This is similar to what I made for Aaron for Valentine's Day. Hopefully he'll accept these seared scallops with quinoa and apple salad and butternut squash puree from A Thought for Food in exchange for the fact that I'm going to working most the weekend.

Friday: I've been making this Cherry Chipotle Pulled Pork with Cilantro Lime Slaw form Steele House Kitchen for a year or two now and it never disappoints!  A perfect Friday night meal to get the weekend started!

      Yes, I'm especially excited for this one! Although a sick kid all weekend means we might be pushing this to Tuesday!
