Weeknight Meal Plan || #3

I know what you're thinking. You and I don't normally do Saturdays together, but with last week's Real Moms post interrupting our new regularly scheduled meal plans and yesterday's post of our favorite Austin shops giving this week's the boot, I just couldn't imagine letting it go another week! So, hi! Happy Saturday!  I hope your weekends are all off to a wonderful start. Prior to these posts, I typically did all of my weekly meal planning on Sundays, so hopefully this one is perfectly timed for you, too.  With Aaron gone most of this past week, Parker and I enjoyed quite a few Mother/Daughter dates out to eat, so I'm really looking forward to getting back in the kitchen this week and trying some new recipes. This might be the first week in awhile where everything on the menu is new to me! Have you guys discovered any new favorites from these posts? I absolutely loved this paleo Creamy Sun-Dried Tomato Chicken recipe from meal plan #2 and am excited to add it into another weekly rotation!  Happy weekend, friends!

Monday: Finally someone who shares my abounding love for sweet potatoes! These from Camille Styles look totally delicious and are first up on the menu.  Since we've already got this yummy chimchurri sauce on the menu I'm going to do flat-iron steaks, too, to finish up the meal!

Tuesday: Tostada Tuesday could totally be a thing, right? Either way I can hardly wait to make these Avocado Shrimp Tostadas from What's Gaby Cooking

Wednesday: I'm such a sucker for a good sheet pan recipe. They're so easy for those hectic mid-week evenings and always turn out delicious. I'm excited to try this Honey Mustard Chicken and Vegetable one from Seasons and Suppers for the first time.

Thursday: Is it possible to go an entire week and not make something from Skinny Taste? I don't think so! Hoping Parker will like these Quinoa Huevos Rancheros bowls as much as we do.

Friday: You guys. I can't stop thinking about this Barbecue Chicken Pizza from Yummy Healthy Easy. How will I ever make it until pizza Friday?! I'll pass on the red onions because pregnancy food aversions, but barbecue chicken pizza with a side of watching Moana with Parker sounds like a perfect Friday night!

    My sister saw the pictures over my shoulder and said the sweet potatoes looked really good. Must try for meatless Monday!
