I'm so excited for this round of Weeknight Meal Plan, mostly because of all of the great recipe suggestions you guys left last week! I feel like this is going to be a great way to break out of my usual rotation of meals and try some new things. There is a strong quinoa theme this week which I'm not at all mad about. We've also been doing a lot of kale caesar salads as a side since this post, so I'm sure that will pop up at least once. In other news, we spent the week brainstorming ideas for the rest of our spring calendar and I couldn't be more excited about what's to come! Aaron is off to the NBA All-Star weekend which means it will be another girls weekend for me and Parker. Not sure what we will do just yet, but I'm looking forward to soaking up time just the two of us. What does everyone else have planned for the weekend?! Monday: Creamy Caprese Bake recipe from Half Baked Harvest actually came from a commenter on last week's post! How good does this look?! This will be my first time making it and I'll likely add ground beef because husbands.
Tuesday: I'll use the leftover quinoa from yesterday's meal for this Chopped Kale and Quinoa Salad with Avocado from Chef Savvy.
Wednesday: My friend Beth recommended this sheet pan chicken and roast potatoes recipe from the New York Times and it's become a total staple in our house. Sometimes I swap regular potatoes for sweet potatoes or other root vegetables and you can also swap greek yogurt for the regular yogurt (even though it says not to-- total rule breaker, I know.)
Thursday: This Creamy Sun-dried Tomato Chicken from My Natural Family is another reader comment recommendation from last week that I'm super excited to try. (Apparently if you have an Instant Pot it's perfect for that, too!)
Friday: We never stray from Pizza and a Movie Friday, so we'll be combining these beer-braised carnitas from Bon Appettit with roasted peppers and mozzarella atop a pizza crust come the end of the week!

Oh Yum! It all sounds so fantastic! I'll definitely be trying these quinoa recipes! We still have some spaghetti squash in our cold storage room so I'm thinking of cooking up that and creating a tomato sauce that will work well with chicken. I also have some shredded zucchini left over so I plan to make that the base of a sun-dried tomato frittata (who says it's just a breakfast food, right?)
