Who would have ever thought a place like Costco can be so addicting? I have an entire cabinet full of just paper towels and haven't had to buy dishwashing tablets since October. I'm obsessed. My latest jumbo size splurge was an enormous carton of perfectly plump strawberries that are so red I could see them from a mile away. Sold! After hurdling the initial obstacle of getting the container to fit in the refrigerator came the task of finding a multitude of ways to use up all of the juicy fruits. Enter strawberry bruschetta. It's an absolutely dreamy light lunch or party appetizer and the combination of strawberries, basil, and goat cheese is just sublime. File this one under quick, easy, and totally delicious!
{Recipe}
INGREDIENTS:
1 cup diced strawberries
1 tbsp. superfine sugar
1 french baguette, sliced thick
4 oz. goat cheese
2 tsp. balsamic vinegar
¼ cup minced basil leaves
Freshly ground black pepper
DIRECTIONS:
Preheat grill or grill attachment for stovetop. Toast baguette slices until slightly crispy and preferably with grill marks. Combine the strawberries and sugar in a small bowl; stir gently to combine and let sit for 15-30 minutes. Spread a thin layer of goat cheese on top of each baguette slice. Top each slice with a spoonful of the strawberry mixture. Drizzle with balsamic vinegar. Top each slice with a pinch of basil and cracked pepper. Enjoy!
