I spent this past weekend up in Big Sur, celebrating the new year and my 30th birthday with Aaron. I don't know how I have lived in California for more than seven years and not visited this little city yet! It was truly one of our favorite trips we have ever taken. Between our breakfasts at Big Sur Roadhouse, dinners at Big Sur Bakery, and the roasting of marshmallows by the fire at night, though, I came home in need of a major detox! Yesterday, while Blair and I were plotting out our editorial calendar for the next few months, I whipped up this delicious little number that is just as tasty as it is nutritious. Plus, between the protein in the chia seeds and the greek yogurt, this is one beverage that won't have you reaching into the pantry an hour later!
Recipe
(makes one smoothie)- 1 ½ cups kale, roughly cut
- ½ c. greek yogurt
- 1 c. almond milk (you can use flavored or original depending on your preference)
- ¼ c. blueberries
- 2 tablespoons chia seeds
- ¼ of a meyer lemon, including the rind
Combine all ingredients in a blender and blend until smooth. Chill before enjoying.

Very similar to my favorite recipe, but your mason jars and straws are way cuter than what I drink mine out of! I think going the extra step would make any smoothie more delicious. :]

Me too! I have been trying to try out a new salad at home a couple times a week and have been experimenting a lot with kale. Maybe one of those will make it up on here too!
