I'm not going to lie, you guys, Parker was playing at the playground at Whole Foods the other day and I was eyeing a woman drinking a glass of rosé with serious envy! With Spring Break approaching and our Memorial Day Palm Springs trip already on my mind, I decided to make three bright, summery beverages that taste just as good whether in cocktail or mocktail form. That's right! Under 21? With child? Not to worry. These super delicious little island numbers are for you, too! (Plus, they're full of real fruit and relatively healthy!) Keep reading for the full boozy and virgin recipes and, whether staying put this month or hitting the road, happy spring breaking, friends!
Spring Break Cocktails: Strawberry Mint Tea Spritzer
(makes 4 cocktails)
Ingredients:
- 1 c. strawberries, stems removed and cut in half
- 1 c. water
- ½ c. agave
- 12 mint leaves
- 2 c. fresh brewed black or green iced tea
- 6 ounces gin (Optional)
- 1 c. sparkling water
- ice
- extra mint and strawberries for garnish
Method:
In a blender, blend strawberries, water, and agave to create a sweet strawberry puree. Fill each cocktail glass with ice and add puree, splitting between each of the four glasses. Add three mint leaves to each glass. If using gin, add gin now, one shot per glass. (If not, don't fret, it's still delicious!) Top with iced tea, a splash of sparkling water, and garnish as you like. Enjoy!
Spring Break Cocktails: Honey Pina Colada
(makes 4 cocktails)
Ingredients
- 1 pineapple, peeled and cut into chunks (you might set aside four small triangle slices for garnish if you wish)
- 1 13.5 ounce can coconut milk (not light)
- 3 tablespoons honey
- 2 cups ice
- 6 ounces dark rum or fresh squeezed orange juice if making a mocktail version
- ¼ c. shredded coconut
Method:
Combine all ingredients in a blender and blend until smooth. Split the blended mix between four cocktail glasses and top with shredded coconut and pineapple garnish. This one is so simple and so good! Even the mocktail version!
Spring Break Cocktails: Blood Orange Margarita Slushie
(makes 4 cocktails, you will need a snow cone maker for the slushie part!)
Ingredients:
- 1 cup fresh orange juice (about 5 blood oranges)
- 1 cup fresh blood orange juice (about 4 oranges)
- 1 cup fresh lime juice (about 8 limes)
- 1 cup tequila (optional-- leave out for mocktail version)
- 3 tablespoon agave
- rosemary for garnish
- 6 cups of ice
- snowcone maker
- additional blood orange for garnish
Method:
Combine first 5 ingredients in a large pitcher and stir to combine. (Omit tequila if you're making a mocktail.) Using your snowcone maker, begin shaving the ice down and fill each glass with ice, nearly to the top-- it will melt down when you pour the liquid on top. Top each glass to the top with your juice mixture and garnish with blood orange slice and rosemary. Ahhh! If only mine could have tequila!
