{RASPBERRY RUMBLE}

After careful observation, I think there are two types of people: Those who follow a recipe down to the very last detail and those who are a bit more improvisational.  In my best dreams I am the former and all of my foodie creations come out looking like something out of Bon Appetit magazine, but in reality cooking for me is a little more like a creative experiment.  A couple week’s ago, it was mid-afternoon on a Saturday and we found ourselves hosting a few friends in our backyard at moment’s notice.  I grabbed a few bottles from the pantry, a couple items from the refrigerator and set out to create a quick cocktail that would be appropriate for a casual backyard shindig.  The result?  A bright, festive cocktail that is equal parts tasty and refreshing!

I have dubbed it the Raspberry Rumble!

Ingredients for two:

-two glasses filled with crushed ice

-1/2 c. rum

-1/2 c. + 1/4 c. fresh raspberries

-1 lime

-1 bottle of gingerale

-2 tsp. Rose’s grenadine

- 1/2 c. homemade simple syrup (equal parts sugar and water)

-regular size ice cubes

In a cocktail shaker combine rum, 1/2 c. raspberries, the juice of 1/2 a lime (cut other half into two quarters and garnish glasses), grenadine, simple syrup, large ice cubes (so that they crush the raspberries while shaking).  Shake vigorously 50-75 times– there is no such thing as too many shakes!  Strain liquid from cocktail shaker into glasses until about half full.  Split remaining fresh raspberries between two glasses and top with a generous pour of fresh ginger ale for a little sparkle!
