With Cinco de Mayo less than a week away, I thought it fit for this edition of Cocktail Hour to pay homage to one of my favorite holidays. Naturally, that meant margaritas but I thought we should spice things up a bit and try something a little more off the beaten path which is when I landed on a Blood Orange Margarita. The perfect combination of sweet and tart! On another note, want to know what I love about holidays like the Fourth of July and Cinco de Mayo? Well, besides the fact that they both involve warm weather and delicious food, I love that they are both super low maintenance. I mean there are no gifts involved, no fancy dinners that involve hours of preparation, and no expectations. It just an excuse to put on your favorite casual summer attire, spend the day with friends, and a perfect reason to try out a new cocktail!

Blood Orange Margaritas
(This recipe is meant to be enjoyed with friends, so it makes a whole pitcher!)
-Juice of 10 blood oranges (about 1 quart)
-Juice of 10 limes (about 1 1/2 cups)
-1 cup Cointreau
-3 1/2 cups tequila
-Kosher Salt for rim
-extra limes for garnish
In a large pitcher, combine lime juice with blood orange juice, cointreau and tequila. Refrigerate for at least an hour– the colder the cocktail the better is always my rule of thumb!
Cut a lime into 4 wedges. Take one wedge and slowly slice the middle until you reach the rind. Take this rim and slide around the rim of each glass, squeezing slightly. Pour enough kosher salt on top of a flat surface that is wide enough to accomodate the rim of your glass. I use the top of a round tupperware container for this. Place glass upside down in the salt until the rim is thoroughly covered. Repeat for all other glasses.
Now just fill all of those perfectly salted glasses and enjoy the party!
